Jól Pastries / Julekaker
When it comes to Jól traditions back in ancient time, there is little written material as opposed to in example the Jól slaughtering. It is assumed that this may be related to the fact that it was mainly women who were responsible for the baking.
What we do know is that the Norsemen made bread, flatbread and some kind of lefse for Jól. Back then, as today, you saved the goodies for the Jól feast. The best ingredients were used; sour cream, cream, honey and the best flour you could get, and always extra of it in what was baked for Jól. They usually started with baking the flatbreads first; already in the autumn. They were baked and stacked on the stabbur. Because they wanted the bread, lefser and cakes fresh, these were baked as close to Jól as possible.
In the 1700s, cookies were not defined as julekaker, and it was as late as in the 1800s that the concept of Christmas cookies tradition was formed. According to Hanna Winsnes' book "Textbook about the different branches of the household" from 1845 the 7 original Julekaker is: Sandkaker, Pepperkaker, Fattigmann, Goro, Berlinerkranser, Krumkaker and Serinakaker.
Many of the cookies in the Norwegian baking tradition today originate outside the country's border, and it's more and more common to choose only ones personal favorite cookies for the holiday instead of the traditionally 7 sorts.
